The honest answer first: the best climbing ice is plastic — it gives a little when you strike instead of shattering, and you usually find it between −5 and −10 °C. In this window your tools often stick with a single swing; the ice "takes" the tip without breaking away. Climbers fondly call it "hero ice" — it makes any grade feel easier.
Two simple signals help you tell good from bad ice: color and sound. Deep-blue, dense ice is usually strong and plastic; white or milky-opaque ice contains air or trapped snow and is weaker. And the sound: a solid, dull tone when you tap means "firm," a hollow ring means "air behind it."
The flip side: too cold and ice turns brittle. Below about −20 °C the ice is under internal tension and shatters into large plates when struck — the notorious "dinner-plating," where plate-sized shards break off. Too warm is bad too: in sun and rapid thaw, ice detaches from the wall and falls.
The ideal window is −5 to −10 °C: plastic ice that takes the tools. Much colder (below −20 °C) makes ice brittle and dangerously fragile; much warmer or in full sun it goes soft and detaches. Remember: temperature changes over the day — ice that was great in the morning can rot in the midday sun.
Blue to clear = dense, well-bonded, plastic — that's what you want. White or milky = air inclusions, often weaker and more brittle. Be especially careful with very white, aerated ice after strong wind — it bonds poorly and carries little.

Free-hanging icicles, thin pillars and curtains are often connected to the wall only at the top or bottom — they can break off entirely under load or with a temperature swing. As a beginner you climb closed ice surfaces bonded to the wall, not loose structures.
Warning signs are: fresh fracture edges and shards on the ground (something just broke off), running water behind thin ice, clearly audible cracking and rapid warming with sun. One sign means "look closer," several mean "turn around."
Ice quality isn't a matter of style but the central safety decision in ice climbing. Bad ice holds neither tools nor crampons nor ice screws reliably — on brittle or hollow ice even the best screw is worthless. Assess the ice from the ground and continuously while climbing, not just once.
And respect the time of day: the most dangerous ice is often the ice that was perfect yesterday and thaws in today's afternoon sun. When in doubt, always: turning around is a strength, not a defeat.
